Chicken and bulgur salad, a salad dish that can be eaten as a meal. Adding bulgur and chicken made it a delicious, useful and fulfilling dish suitable for a diet with high nutritional value that Mrs. Mas Watad advises you.
Ingredients:
1/2 cup bulgur
2 boneless chicken breast fillets
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 cup chopped lettuce
1\2 cherry tomato, chopped
1/4 cup mint leaves, chopped
1\2 cup cucumber
2 tablespoons fresh lemon juice
4 ounces feta cheese, crumbled
Preparation:
Place bulgur in a medium bowl. Cover it with 1 cup of boiling water and let soak until water is absorbed, for about 20 to 30 minutes.
Heat a frypan over high heat and cook the chicken, until charred and cooked through. Sprinkle on both sides with half the salt, pepper, and paprika, set aside.
Add remaining oil, salt, pepper, and paprika, plus all other ingredients except feta, to the bowl of bulgur and toss to combine.
Slice the chicken. Divide salad among 4 plates and top with chicken and feta cheese.
